SAFFRON (For Kashmiri Cuisine)
From Casa Medici at Taj Mahal to Miyako, a Japanese restaurant, Rohit Razdan has come a long way. He started with his own catering business and is now running an outlet called Saffron (at Kalkaji Extn.) which is only a take-away and home delivery joint. Being a Kashmiri himself, Razdan started to serve Kashmiri cuisineand thus the name Saffron (a specialty of Kashmir).
The menu offers mutton rogan josh for Rs. 80, keema kofta for Rs. 70, mutton yukhni (mutton made in yoghurt) for Rs. 85 and rajma kashmiri with only tomato gravy at Rs. 35. All these are made in mustard oil with no onion, ginger and garlic. They are prepared in dry masala like saunf and sauth powder, dalchini, zeera, cloves and bay leaves - the real Kashmiri way. The Sunday specialty is Dumpukht biryani noth vegetarian and non-vegetarian.
